Sous Vide Egg Bites

Ingredients

  • 6 large eggs
  • 1 /2 cup cottage cheese
  • 1 /2 cup Gruyere cheese, grated
  • 1 /4 cup heavy cream
  • 1 /4 teaspoon salt
  • 1 /8 teaspoon black pepper
  • Optional fillings:
  • Crispy bacon bits
  • Roasted red peppers, diced
  • Baby spinach, chopped
  • Fresh herbs (chives, basil, or parsley)

Instructions

    Set sous vide circulator to 172°F (77.8°C).

    Blend eggs, cottage cheese, cream, salt, and pepper until very smooth.

    Grease small mason jars or silicone egg molds.

    Fill each jar about 3/4 full with egg mixture.

    Add desired fillings and Gruyere cheese to each jar.

    Seal jars finger-tight (not too tight) if using mason jars.

    Lower jars into preheated water bath.

    Cook for 60 minutes until eggs are set but still creamy.

    Remove from water bath and let cool slightly.

    Run a knife around the edge and unmold if using silicone molds.

    Serve warm, garnished with fresh herbs.

Pro Tip

For the smoothest texture, blend the egg mixture really well and strain through a fine-mesh sieve before cooking. These can be made ahead and reheated gently in the microwave.
